I have a few I've had on my phone for years now and still play every now and then. This is android though. I don't know if you're just asking for iOS apps and I don't know if all of these are available for both.
There is this one indie game that came out earlier this year if I'm not mistaken that takes you on an emotional journey about life and loss through building up a relationship with a bird over roughly a month. I haven't played it myself yet but from what I've seen and read, including from friends who played it, it sounds like a genuinely well-written, unique game.
It's called Bird Alone and is available for both android and iOS. I know that much.
I also really like South Park: Phone Destroyer which is a surprisingly well-made and fun deck-building and real-life strategy versus game where you collect different characters from the show, built a deck, and then fight other players (or go through the story mode) by strategically summoning the characters. It's a freemium game though, so of course, there are lots of microtransaction options, but I never paid a penny and I've been playing it for like two years now and it's still a lot of fun to me.
I also really like Tentacle Wars which is one of those games based on a classic flash game and there are multiple copycats of it, but this is the version I've been playing. It's just a really simple but challenging puzzle game that I highly recommend.
The game Mini Metro is one of my favorite casual games of all time which is about building a simplistic train-system and trying to survive as long as you can. Again, very simple but challenging. I'm playing it on PC but if I remember correctly it was originally a mobile game and I highly recommend it.
Another simple thinking games are Kami 1 and 2. I played the first game on PC but the sequel is mobile-exclusive and I've been loving both installments. You're basically trying to fill in different screens with the same color in a set amount of moves. Perfect for the little breaks in the day.
And lastly there are the games from Bart Bonte called yellow, black, red, blue, & green. Those are a series of little casual puzzle compilation. It just throughs random puzzles without any explanation and you just have to experiment and figure them out on yourself. Again, very simplistic and perfect for the little breaks in the day. These might be android exclusive though.

I quite liked the game Populus Romanus. It's a simple hex-based strategy game that works quite well with the format.

If you like the Alien franchise, Alien: Blackout - (I'm an Alien fan so my opinion might be not be objective) I really enjoyed it - It's short and nice to dig into for a few hours.
It is a "sequel" to Alien: Isolation so keep that in mind if you really don't want the end of Alien: Isolation to be spoiled - If you don't really care, you can enjoy it without having played Isolation

I'm not a fan of mobile gaming but The Room series started on mobile and is one of my favourite game series of all time, it's fantastic.
I believe Legend of the Skyfish was also originally a mobile game, and that was pretty decent.

I've collected quite a few good mobile games. None of these have annoying microtransactions or ads. Also, I'm on iOS, so some of these might not be available on Android. List is in (somewhat) alphabetical order, not best to worst.
Badland. One of the simpler games on this list, but still good fun. Basically a puzzle platformer, except you're floating through the air.
Cat Quest. An Action RPG all about cats. Also on Switch, PC, and PS4, but it works really well on a touchscreen.
Chrono Trigger. Yes, I know this is a SNES game, but it works surprisingly well on a touchscreen. If you're looking for a convenient way to play a classic JRPG, give this a shot.
Crashlands. This is another Action RPG similar in gameplay to Cat Quest. Combat is fun, the writing is hilarious, and it features a fairly involved crafting and base-building system.
Deck 'Em! Boxing meets solitaire. Unexpected, but fun in quick bursts.
Deus Ex Go. It may not share much with its namesake, but it's a fun, if a bit repetitive, puzzle game.
Downwell. You have guns on your boots. What more do you need?
Lara Croft Go. Very similar to Deux Ex Go, but with a Tomb Raider skin and some different mechanics.
Legends of Runeterra. Riot's competitor to Hearthstone. Plays just as well on mobile as on PC.
Monument Valley 1 & 2. Beautiful puzzle games based on optical illusions. Highly recommended.
Alto's Adventure/Alto's Odyssey Like an endless runner, except it's snowboarding/sandboarding, and it's absolutely gorgeous. Super zen game.
Pocket City. Looking for a Sim City style game for mobile and can't stand microtransactions? Check this out. A little light on features, but a very competent city builder.
The Battle of Polytopia. Probably my all-time favorite mobile game. Basically Civilization-lite. Each game takes an hour or less, plus there's online multiplayer.
Rayman Adventures. This is an exception to the no-microtransactions rule. There are plenty of in-app purchases, but if you ignore those this is still a great Rayman game.
Rebel Inc. From the makers of Plague Inc., but you're running a government.
Stardew Valley. The game you know and love, on your phone.
Tiny Defense. Probably the oldest game on this list, but still a fun take on the Plants vs Zombies formula.
Transistor. The second of Supergiant's masterpieces works surprisingly well on mobile.
Worms 4. It's a bit downsized, but this version of Worms is still a blast.

As long as you don't pump money into it, Fate/Grand Order has a strong storyline, solid enough gameplay for mobile entertainment and a very long shelf life. Balanced pretty hard for even the very low end characters to be viable so it's very easy to play free. I'd definitely recommend it.

I play Dead cells, Minecraft and Stardew valley with a ds4 controller, but I dont usually play on mobile frequently tbh

Perhaps this may be a contentious suggestion, but I've played a bit of Genshin Impact on PC and seems like a great game so far. I know there is a mobile version of the game that from what I hear is the same game with lower graphics.

That's actually not quite what I meant, although your assessment is largely accurate on its own. Rather, I was referring to the fact -- or, at least, it feels like a fact -- that any mobile games worth investing one's time in end up literally going to hell, because they get shut down. This has happened too many times to me. Rage of Bahamut, Puzzle Fighter, Monster Strike, King's Knight: Wrath of the Dark Dragon, Mobius Final Fantasy (REMAKE IT YOU COWARDS), and that's just off the top of my head. And then you've got issues like games that are ongoing discontinuing support for older devices and operating systems (I can no longer play Pokémon Go, for example), or Apple's decision to make all older, 32-bit games incompatible en masse (wherefore art though Chaos Rings?), and it's just like, fuck this entirely.
Literally just today I found out that Kingdom Hearts Union X is being shut down. I can't take this anymore.

I've been playing Dragon Quest Tact lately. I love gacha and I really like DQ, so this is a good combination for me, and since the global servers just launched, it's also good to be playing since the very first events.

I was surprised how Minecraft controls well, but I'm not a Minecraft player myself. Also, the launch lineup for Apple Arcade is stellar: What the Golf, Cardpocalypse, Exit the Gungeon, Spaceland, Overland, Grindstone, Shantae, Oceanhorn, Hotlava, Shinsekai, Sayonara Wild Hearts...
